Vegas import Carversteak, which opened in March in Midtown West, is more corporate than another new steakhouse import from the same city, the Golden Steer. Born in a casino in 2021, the New York Carversteak, run by Carver Road Hospitality, is tucked within the Civilian Hotel. Its hotel environs are reinforced when you have to venture down to the basement for the bathrooms — someone called it an odyssey. Yet there are still luxe details. A server brings diners a box of knives created in Japan, China, and France to choose from. And yes, there’s a baked Alaska (called Baked NYC on the menu) fired up on a cart.

What to order

• I am still dreaming about the wagyu cheesesteak bites ($28), an order of two mini-rolls full of juicy shaved Australian wagyu and caramelized onions, plus melty aged provolone cheese, and truffle mornay sauce.

• The NY strip loin ($81) was a perfectly good steak at 12 oz., sourced from Arkansas, cooked medium rare, which I cut and dipped into the bourbon-peppercorn sauce.

• I enjoyed the profiteroles, gold leaf-topped little pastries stuffed with vanilla ice cream, drenched with chocolate ganache before serving.

What to drink

The Old Fashioned cart comes rolling to the table for an immediate upsell to one of their fancy versions of the whiskey drink. Don’t feel like you have to order, but if you’re in the mood for it, the Overture level ($30) with the Rossville Union Straight rye was smooth. While I was intrigued by the Shuck & Sear Martini — a garnish of seared steak, naturally — I went for the Pepperoncini Papi, the dirtiest martini on the menu, with gin ($24). It was a nice combination of briny-spicy and came with a sidecar and a pepper-stuffed olive.

Perfect for families and groups looking for easy-to-get-into nice dinners just outside of the prime Times Square zone.
