This single-serving chopped chicken salad is much much easier to make and neater to consume than a composed salad. There is a good ratio of toppings to lettuce, and the uniform pieces take up the dressing nicely. This salad can easily be cut in half for 2 smaller lunch servings, left whole for a hearty, healthy dinner serving, or doubled to serve more people. Adapt as you wish, or sub in your favorite items, but chopping is the way to go!
